Located at 129 Ferrari Ranch Rd, Suite 150, the new restaurant marks the brand’s third storefront, following its debut in Zephyr Cove, Nevada, and a second location in Rocklin, California, earlier this year.

Founded by entrepreneur Chris Ewing, best known for launching Shari’s Berries and One Inc., Notty’s Italian Burrito was born from a simple idea: what if you could eat spaghetti on a road trip without the mess? The result is a fresh take on Italian fare, all the flavors of classic pasta and pizza, wrapped in a handmade six-ingredient dough that’s air-fried to a light, crispy finish.

A New Way to Enjoy Italian

Each “Notty” is crafted to order and filled with familiar Italian flavors like marinara, mozzarella, sausage, and roasted vegetables. The dough is made fresh daily, rolled thin for a crisp bite, and air-fried instead of baked or deep-fried, giving customers a portable meal that’s lighter than a calzone but just as satisfying.

Menu highlights include the Chicken Parmigiana, Firehouse, Meat Lovers, Margherita, and Tommy, a signature burrito inspired by layers of lasagna tucked inside a crispy shell. Notty’s also serves house-made lemonades and limeades, alongside vegetarian options and rotating seasonal specials.

“The Italian burrito is our way of taking comfort food and making it travel-friendly,” said founder Chris Ewing. “We wanted something that’s indulgent yet approachable, and easy to eat whether you’re at the lake, on your lunch break, or driving home from work.”

The concept has drawn attention from regional media, including the Sacramento Bee, which highlighted Ewing’s inventive approach to combining Italian flavors with fast-casual convenience.

Community, Craft, and Growth

The Lincoln location continues Notty’s expansion across Northern California, with plans to bring its fast-casual concept to more cities in 2026. The restaurant features an open kitchen, casual dine-in seating, and streamlined digital ordering through its website and delivery platforms including DoorDash, Uber Eats, and Postmates.

Beyond the food, Notty’s emphasizes community connection through Tommy Cares, a fundraising initiative that partners with local organizations and schools to give back a portion of proceeds from community events.

The Lincoln restaurant will open Saturday, November 15th, at 11 a.m. Regular hours will run 11:00 a.m. to 10:00 p.m. daily.
